1/3 cup melted white chocolate

1/4 cup white chocolate curls


Instructions

1. Sift the almond flour and powdered sugar together twice into a large bowl.

2. Beat the egg whites until foamy, then slowly add granulated sugar while mixing until stiff glossy peaks form.

3. Mix in peppermint extract and green food coloring.

4. Fold the dry ingredients into the meringue until the batter flows slowly like lava.

5. Transfer batter into a piping bag and pipe circles onto parchment-lined baking sheets.

6. Tap the baking sheets on the counter to remove air bubbles.

7. Let the shells rest for 30 to 45 minutes until dry to the touch.

8. Bake at 300°F for 14 to 16 minutes.

9. Cool the shells completely before filling.

10. Beat butter until creamy, then mix in powdered sugar, heavy cream, peppermint extract, and melted white chocolate.

11. Pipe filling onto half the shells and sandwich with remaining shells.

12. Garnish with crushed peppermint candy and white chocolate curls.

13. Refrigerate for 24 hours before serving for the best texture.
