Ingredients

1 cup cottage cheese

1 cup self-rising flour


Instructions

1. In a mixing bowl, combine 1 cup of cottage cheese and 1 cup of self-rising flour. Stir until a rough dough forms.

2. Lightly flour your surface and knead the dough for 1–2 minutes until smooth. If sticky, dust with more flour.

3. Divide the dough into 2–3 equal portions. Flatten each piece by hand or use a rolling pin to about ½-inch thickness.

4. Preheat a nonstick or cast iron skillet over medium heat.

5. Cook each flatbread for 2–3 minutes per side, until golden and fully cooked.

6. Optional: Brush with olive oil or butter. Add fresh herbs, garlic, or seasoning for extra flavor.

Notes

Make sure your cottage cheese is not too watery—drain excess liquid for better dough consistency.

To bake instead of pan-fry: place on parchment-lined baking sheet and bake at 425°F for 10–12 minutes.

Avoid over-kneading the dough to keep the texture soft and pillowy.
