Ingredients

1 cup (227g) unsalted butter, softened

½ cup (65g) powdered sugar

1½ cups (195g) all-purpose flour

¼ cup (30g) cornstarch

1 teaspoon vanilla extract

Optional: powdered sugar for dusting


Instructions

  1. In a large mixing bowl, beat the softened butter and powdered sugar until very light and fluffy (3–5 minutes).
  2. Add vanilla extract and mix to combine.
  3. Sift together flour and cornstarch in a separate bowl.
  4. Gradually beat dry ingredients into the butter mixture until a soft dough forms.
  5. Transfer dough to a piping bag fitted with a large star tip, or roll into balls and flatten with a fork.
  6. Pipe or shape cookies onto a parchment-lined baking sheet.
  7. Chill the tray of cookies for 15–20 minutes to help them hold their shape.
  8. Preheat oven to 300°F (150°C).
  9. Bake cookies for 15–18 minutes, until edges are lightly golden.
  10. Let cookies cool on the baking sheet, then dust with powdered sugar if desired.
