Description

All the comforting flavors of classic stuffed peppers come together in one easy skillet meal. This Unstuffed Pepper Skillet is rich with savory ground beef, vibrant bell peppers, tender rice, and a tomato-based sauce that’s hearty, delicious, and ready in under 40 minutes.


Ingredients

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 pound ground beef

1 red bell pepper, diced

1 green bell pepper, diced

1 can (14.5 ounces) diced tomatoes

1 can (8 ounces) tomato sauce

2 teaspoons Italian seasoning

1 teaspoon salt (or to taste)

1/2 teaspoon black pepper

2 cups cooked white rice

Optional: fresh parsley for garnish


Instructions

1. Heat olive oil in a large skillet over medium heat. Add diced onions and cook for 2-3 minutes until softened.

2. Stir in minced garlic and cook for another 30 seconds until fragrant.

3. Add ground beef to the skillet, breaking it apart with a spoon. Cook until browned and no longer pink. Drain excess fat if necessary.

4. Stir in the chopped red and green bell peppers. Cook for about 5-7 minutes, until slightly softened.

5. Pour in diced tomatoes (with juices) and tomato sauce. Stir in Italian seasoning, salt, and pepper. Let it simmer uncovered for 5-10 minutes.

6. Add the cooked rice and gently fold it into the mixture until evenly distributed.

7. Reduce heat to low, cover, and let sit for 5 minutes to warm through.

8. Fluff with a fork, garnish with parsley if desired, and serve hot.

Notes

For a spicier version, add chopped jalapeños or red pepper flakes when sautéing the peppers.

You can substitute ground turkey or chicken for a leaner twist without sacrificing flavor.

Add a layer of shredded cheese on top and cover for a few minutes until melted for a creamy finish.
