Description
These S’mores Cookie Bars are a no-fuss, oven-baked version of the classic campfire treat. They combine layers of graham cracker cookie dough, melty chocolate, and gooey marshmallows into irresistible dessert bars. Perfect for parties, holidays, or anytime you’re craving something nostalgic and sweet.
Ingredients
1 ½ cups graham cracker crumbs
1 cup all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
¾ cup unsalted butter, softened
½ cup brown sugar
¼ cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
2 cups mini marshmallows
1 ½ cups milk chocolate chips
½ cup semi-sweet chocolate chips (optional)
Instructions
1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper.
2. In a medium bowl, mix graham cracker crumbs, flour, baking soda, and salt.
3. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
4. Beat in vanilla extract and eggs, one at a time.
5. Gradually add dry ingredients to the wet, mixing until just combined.
6. Press two-thirds of the dough into the bottom of the prepared pan.
7. Layer with mini marshmallows and chocolate chips.
8. Drop spoonfuls of the remaining dough over the top, spreading gently.
9. Bake for 25–30 minutes until golden brown and set.
10. Cool completely before cutting into bars.
Notes
Use parchment paper to lift and cut bars easily.
Let bars cool before slicing to avoid a gooey mess.
Slightly underbake for extra gooey centers, or longer for firmer texture.
