Ingredients

3 cups shredded rotisserie chicken

8 cups chicken broth

8 ounces rice noodles

1 yellow onion, halved

1 piece fresh ginger, halved

3 cloves garlic, smashed

2 star anise pods

1 cinnamon stick

2 tablespoons soy sauce

1 tablespoon fish sauce

1 cup bean sprouts

1 jalapeño, sliced

1 lime, cut into wedges

1/4 cup chopped cilantro

1/4 cup sliced green onions

1/2 cup fresh basil leaves

1 teaspoon red pepper flakes


Instructions

1. Char the onion and ginger in a dry stockpot over medium heat until lightly blackened and fragrant.

2. Add chicken broth, garlic, star anise, cinnamon stick, soy sauce, and fish sauce to the pot. Simmer for 25 to 30 minutes.

3. Cook the rice noodles according to package directions, then drain and rinse lightly.

4. Shred the rotisserie chicken into bite-sized pieces.

5. Strain the broth to remove the aromatics and spices.

6. Divide noodles into serving bowls and top with shredded chicken.

7. Ladle hot broth over the noodles and chicken.

8. Finish with bean sprouts, jalapeños, cilantro, green onions, basil, lime wedges, and red pepper flakes before serving.
