Description

These Peanut Butter No Bake Cookies are a simple, quick, and nostalgic treat that come together without turning on the oven. They’re chewy, sweet, nutty, and perfect for any time you need a satisfying cookie without the hassle.


Ingredients

1/2 cup butter

2 cups granulated sugar

1/2 cup milk

1 cup creamy peanut butter

1 teaspoon vanilla extract

1/4 teaspoon salt (optional)

3 cups old-fashioned rolled oats


Instructions

1. In a heavy-bottomed saucepan, combine butter, sugar, and milk. Stir over medium heat until the mixture reaches a rolling boil. Boil for exactly 1 minute.

2. Remove from heat and stir in peanut butter, vanilla, and salt (if using) until smooth.

3. Add the rolled oats and mix until completely coated.

4. Drop spoonfuls of the mixture onto a parchment-lined baking sheet. Flatten slightly if desired.

5. Let cool at room temperature for 30 minutes or chill in the fridge for faster setting.

Notes

Use a heavy-bottomed pan to prevent scorching the sugar mixture.

For firmer cookies, ensure you boil the mixture for the full 60 seconds.

Add chocolate chips after mixing for a twist, but let the mixture cool slightly first.
