Ingredients

1 ½ pounds carrots

2 tablespoons olive oil

3 cloves garlic, minced

½ teaspoon salt

¼ teaspoon black pepper

⅓ cup grated parmesan cheese

2 tablespoons chopped fresh parsley


Instructions

1. Wash and peel the carrots. If large, slice in half lengthwise. Pat dry.

2. In a mixing bowl, toss the carrots with olive oil, minced garlic, salt, and pepper.

3. Arrange in a single layer on a parchment-lined baking sheet.

4. Roast in a preheated 400°F (200°C) oven for 25–30 minutes, flipping halfway through.
