Ingredients
2 large russet potatoes
1 tablespoon olive oil
1 teaspoon kosher salt
Optional: 2 tablespoons butter
Optional: 2 tablespoons sour cream
Optional: 2 tablespoons shredded cheese
Optional: 1 tablespoon chopped chives
Optional: 1 tablespoon bacon bits
Instructions
1. Preheat oven to 425°F (218°C).
2. Scrub potatoes thoroughly under cold water and pat completely dry.
3. Use a fork to poke holes all around each potato to allow steam to escape.
4. Brush each potato with olive oil, then sprinkle generously with kosher salt.
5. Place potatoes on a baking sheet, ideally on a wire rack.
6. Bake for 45–60 minutes until the skins are crispy and a fork inserts easily.
7. Remove from oven, slice open the top, and fluff the interior with a fork.
8. Add your favorite toppings such as butter, sour cream, cheese, chives, or bacon bits.
9. Serve hot and enjoy!
Notes
Always use russet potatoes for the fluffiest interior and crispiest skin.
Don’t wrap in foil if you want a crisp skin—foil will steam the potato.
A wire rack improves air circulation and results in more evenly baked potatoes.
