Ingredients
3 pounds russet potatoes
1 cup sour cream
1 cup mayonnaise
2 cups shredded cheddar cheese
8 slices bacon, cooked and crumbled
1/2 cup chopped green onions
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Wash and dice the russet potatoes into small, even cubes. Cook bacon until crispy, then crumble. Chop green onions and set aside.
2. In a large mixing bowl, combine sour cream, mayonnaise, shredded cheddar cheese, salt, and black pepper. Stir until smooth.
3. Add diced potatoes to the bowl and gently fold to coat them evenly in the creamy mixture.
4. Grease a 9×13-inch baking dish and pour in the potato mixture. Spread evenly.
5. Cover the dish with aluminum foil and bake at 375°F (190°C) for 40 minutes.
6. Remove the foil, sprinkle crumbled bacon over the top, and return to the oven for 15 minutes until bubbly and golden.
7. Garnish with chopped green onions just before serving.
Notes
Use freshly grated cheddar for better melt and flavor.
Cut potatoes uniformly to ensure even cooking.
For extra flavor, toss in a handful of chopped jalapeños or diced bell peppers.
