2 pounds lamb shoulder, cubed

2 tablespoons vegetable oil

1 large onion, finely chopped

4 cloves garlic, minced

2 tablespoons curry powder

1 teaspoon ground cumin

1 teaspoon paprika

1 teaspoon turmeric

1/2 teaspoon cayenne pepper

1 teaspoon garam masala

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons tomato paste

1 can diced tomatoes

1 cup coconut milk

1 cup beef broth

2 tablespoons plain yogurt

2 tablespoons fresh cilantro, chopped


Instructions

1. Heat the vegetable oil in a large Dutch oven or deep skillet over medium-high heat.

2. Add the cubed lamb and brown on all sides until a rich crust forms. Remove and set aside.

3. In the same pot, cook the chopped onion until softened and golden.

4. Stir in the garlic and ginger and cook for 1 minute until fragrant.

5. Add curry powder, cumin, paprika, turmeric, cayenne pepper, garam masala, salt, and black pepper. Stir continuously for 30 seconds.

6. Mix in the tomato paste and diced tomatoes, scraping the bottom of the pan.

7. Return the lamb to the pot and pour in the coconut milk and beef broth.

8. Bring the curry to a gentle simmer, cover, and cook for 1 hour and 30 minutes until the lamb is tender.

9. Stir in the yogurt for extra creaminess and simmer uncovered for 5 more minutes.

10. Garnish with fresh cilantro and serve hot with rice or naan bread.
