Ingredients
2 1/2 pounds chicken thighs and drumsticks
2 tablespoons browning sauce
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon ground allspice
1 tablespoon fresh thyme
3 green onions sliced
4 cloves garlic minced
2 tablespoons vegetable oil
1 medium onion sliced
1 red bell pepper sliced
1 tomato chopped
2 medium potatoes peeled and cubed
1 Scotch bonnet pepper whole
2 cups chicken broth
2 tablespoons chopped parsley for garnish
Instructions
1. Place the chicken in a large bowl and season with browning sauce, salt, black pepper, paprika, allspice, thyme, green onions, and garlic. Toss until fully coated and marinate for at least 1 hour.
2. Heat vegetable oil in a large skillet or Dutch oven over medium-high heat. Brown the chicken pieces on all sides until deeply golden. Remove and set aside.
3. Add onions, bell peppers, tomatoes, and potatoes to the same pan. Cook for several minutes until softened.
4. Pour in the chicken broth and scrape the bottom of the pan to release flavorful browned bits.
5. Add the Scotch bonnet pepper and return the chicken to the pan.
6. Reduce heat to low, cover, and simmer for 35 to 45 minutes until the chicken is tender and the potatoes are cooked through.
7. Remove the Scotch bonnet pepper before serving if desired.
8. Garnish with parsley and serve warm over rice.
