Ingredients
2 pounds beef chuck roast, cut into chunks
2 tablespoons olive oil
1/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1 large onion, chopped
3 cloves garlic, minced
4 large carrots, peeled and chopped
4 medium potatoes, peeled and cubed
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 bottle Guinness stout
4 cups beef broth
1 teaspoon fresh thyme
2 bay leaves
2 tablespoons fresh parsley, chopped
Instructions
1. Pat the beef dry and cut into bite-sized chunks. Season with salt and pepper, then coat lightly with flour.
2. Heat olive oil in a large Dutch oven over medium-high heat. Brown the beef in batches until deeply caramelized. Remove and set aside.
3. Add onions and carrots to the pot and sauté until softened. Stir in garlic and cook for 1 minute.
4. Mix in tomato paste and Worcestershire sauce until combined.
5. Slowly pour in the Guinness stout while scraping up the browned bits from the bottom of the pot.
6. Return the beef to the pot and add beef broth, potatoes, thyme, and bay leaves.
7. Bring to a simmer, cover, and cook for 2 to 2½ hours until the beef is tender and the broth thickens.
8. Remove bay leaves, garnish with parsley, and serve hot.
