Ingredients
1 lb chicken breast, cut into bite-size pieces
1 red bell pepper, chopped
2 green onions, sliced
3 cloves garlic, minced
1/3 cup honey
1/4 cup soy sauce
1 tablespoon rice vinegar
1 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
2 tablespoons cornstarch
2 tablespoons olive oil
1/2 teaspoon salt
3 cups cooked white rice
Instructions
1. Pat chicken dry and toss with cornstarch, salt, and a little black pepper.
2. Whisk honey, soy sauce, rice vinegar, garlic, black pepper, and crushed red pepper flakes in a bowl.
3. Heat olive oil in a large skillet over medium-high heat.
4. Add chicken in a single layer and cook for 6 to 8 minutes until golden and cooked through.
5. Add chopped red bell pepper and cook for 2 to 3 minutes.
6. Pour in the honey pepper sauce and simmer for 2 to 4 minutes until glossy and thickened.
7. Serve over cooked white rice and top with sliced green onions.
Notes
Use a large skillet so the chicken browns instead of steaming.
Add the sauce only after the chicken is fully cooked so it does not burn.
For extra heat, increase the crushed red pepper flakes or add a drizzle of chili oil.
