Description
These festive Grinch Christmas Truffles are no-bake holiday treats made with pistachios, coconut, and sweetened condensed milk, then coated in white chocolate and finished with a red drizzle. Bright, fun, and perfect for gifting or holiday dessert trays!
Ingredients
1 cup shelled pistachios
1 cup unsweetened shredded coconut
1/2 cup sweetened condensed milk
1 cup white chocolate chips
1/4 cup red candy melts or tinted white chocolate
2 tablespoons crushed pistachios (for garnish)
Instructions
1. Add pistachios and coconut to a food processor. Pulse until finely ground and slightly sticky.
2. Pour in sweetened condensed milk and process until fully combined and the mixture holds together.
3. Scoop and roll the mixture into small balls using a cookie scoop or your hands.
4. Place on a parchment-lined tray and refrigerate for 30 minutes.
5. Melt the white chocolate in a double boiler or microwave in 20-second intervals.
6. Dip each chilled truffle into the melted white chocolate. Let the excess drip off, then return to the tray.
7. Melt red candy melts or tinted white chocolate. Transfer to a piping bag or use a spoon to drizzle over truffles.
8. Sprinkle crushed pistachios on top while drizzle is still soft.
9. Chill for another 10 minutes or until fully set.
Notes
Use a cookie scoop to ensure all truffles are uniform in size for even coating.
Make sure the truffles are well-chilled before dipping to prevent crumbling.
Add a drop of peppermint extract to the base for a minty twist.
