Ingredients
2 boneless skinless chicken breasts
12 ounces fettuccine pasta
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon paprika
4 tablespoons butter
4 cloves garlic minced
2 cups heavy cream
1 1/2 cups freshly grated parmesan cheese
1/2 cup pasta water
2 tablespoons chopped parsley
Instructions
1. Bring a large pot of salted water to a boil and cook the fettuccine until al dente. Reserve some pasta water before draining.
2. Season the chicken breasts with salt, black pepper, garlic powder, and paprika on both sides.
3. Heat olive oil in a large skillet over medium-high heat and cook the chicken for 5 to 6 minutes per side until golden brown and fully cooked.
4. Transfer the chicken to a cutting board and let it rest for several minutes before slicing.
5. In the same skillet, melt the butter and sauté the minced garlic for about 30 seconds until fragrant.
6. Pour the heavy cream into the skillet and stir gently while bringing the sauce to a low simmer.
7. Add the parmesan cheese gradually, stirring continuously until the sauce becomes smooth and creamy.
8. Add a splash of reserved pasta water if the sauce becomes too thick.
9. Toss the cooked fettuccine into the Alfredo sauce until fully coated.
10. Top the pasta with sliced chicken and garnish with chopped parsley before serving.
Notes
Freshly grated parmesan melts more smoothly and creates the best Alfredo texture.
Allow the chicken to rest before slicing to keep it juicy and tender.
Use reserved pasta water gradually to loosen the sauce without thinning the flavor too much.
