1 tablespoon olive oil
4 cloves garlic, minced
1 tablespoon honey
2 tablespoons fresh parsley, chopped
1 tablespoon fresh dill, chopped
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Wash, peel, and slice the carrots into evenly sized diagonal pieces.
2. Heat a large skillet over medium heat and add the butter and olive oil.
3. Once the butter melts, add the carrots and stir to coat evenly.
4. Cook the carrots for 10 to 12 minutes, stirring occasionally until they begin to soften.
5. Add the minced garlic and honey, then cook for another 2 to 3 minutes.
6. Season with salt and black pepper and stir well.
7. Remove from heat and toss with fresh parsley and dill.
8. Serve warm and enjoy.
Notes
Slice the carrots evenly so they cook at the same rate.
Fresh herbs provide the best flavor and brightest finish.
Do not overcook the carrots or they may become too soft.
