Ingredients

2 cups graham cracker crumbs

6 tablespoons melted butter

2 tablespoons granulated sugar

16 ounces cream cheese softened

3/4 cup granulated sugar

1/2 cup sour cream

1 teaspoon vanilla extract

2 large eggs

1/2 cup rainbow sprinkles

1/2 cup white chocolate chips

2 tablespoons rainbow sprinkles for topping


Instructions

1. Preheat the oven to 325°F and line an 8×8-inch baking pan with parchment paper.

2. Mix the graham cracker crumbs, melted butter, and sugar until combined. Press firmly into the bottom of the pan.

3. Bake the crust for 8 minutes and allow it to cool slightly.

4. Beat the cream cheese until smooth in a large mixing bowl.

5. Add the sugar and mix until creamy.

6. Blend in the sour cream and vanilla extract.

7. Add the eggs one at a time, mixing slowly after each addition.

8. Fold in the rainbow sprinkles and white chocolate chips gently.

9. Pour the cheesecake filling over the crust and smooth the top evenly.

10. Bake for 32 to 36 minutes until the center is mostly set with a slight jiggle.

11. Cool completely at room temperature, then refrigerate for at least 4 hours.
