Ingredients

2 boneless skinless chicken breasts

1 teaspoon salt

1/2 teaspoon black pepper

1 cup all-purpose flour

2 large eggs

2 cups panko breadcrumbs

1/2 cup vegetable oil

4 cups cooked white rice

1 large cucumber thinly sliced

2 green onions sliced

1 tablespoon sesame seeds

1 cup seaweed salad

1/2 cup tonkatsu sauce


Instructions

1. Place the chicken breasts between plastic wrap and pound them to an even thickness. Season with salt and black pepper.

2. Add flour to one bowl, beaten eggs to another bowl, and panko breadcrumbs to a third bowl.

3. Coat each chicken breast in flour, dip into the eggs, then press into the panko breadcrumbs until fully coated.

4. Heat vegetable oil in a large skillet over medium heat.

5. Fry the breaded chicken for 4 to 5 minutes per side until golden brown and fully cooked.

6. Transfer the chicken to a wire rack or paper towels and let it rest for several minutes.
