2 tablespoons olive oil

2 poblano peppers

1 medium onion, diced

3 cloves garlic, minced

4 cups chicken broth

2 cups shredded cooked chicken

1 cup corn kernels

4 ounces cream cheese, softened

1 cup heavy cream

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons lime juice

1/4 cup chopped fresh cilantro


Instructions

1. Roast the poblano peppers until the skins are blistered and charred, then peel and dice them.

2. Heat olive oil in a large pot over medium heat and sauté the diced onion until softened.

3. Stir in the minced garlic and cook for about 1 minute until fragrant.

4. Add the diced poblano peppers, chicken broth, corn, cumin, chili powder, salt, and black pepper.

5. Stir in the shredded chicken and simmer the soup for 15 minutes.
