Ingredients

6 large eggs

1 cup cottage cheese

1 cup shredded cheddar cheese

1 cup green peas

1 cup chopped fresh spinach

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Preheat your oven to 375°F (190°C). Grease an 8×8 or 9×9 inch baking dish with non-stick spray or butter.

2. In a large bowl, whisk the eggs until fully beaten and slightly frothy.

3. Stir in cottage cheese, shredded cheddar, green peas, spinach, salt, and pepper. Mix until well combined.

4. Pour the mixture into the prepared dish and smooth out the top.

5. Bake for 35–40 minutes, or until the center is set and the top is golden brown.

6. Let cool for 5 minutes before slicing and serving.

Notes
