Description

A cozy bowl of creamy sesame peanut noodles made with pantry staples and ready in minutes. Whether served warm, cold, or somewhere in between, this dish is the ultimate comfort food. Perfect for lazy days, quick lunches, or pajama-dining nights at home.


Ingredients

1/2 lb spaghetti or ramen noodles

1/3 cup creamy peanut butter

3 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar or lime juice

1 tablespoon maple syrup or honey

1/2 teaspoon garlic powder or 1 clove fresh grated garlic

1/4 cup warm water (as needed for thinning sauce)

2 tablespoons chopped green onions

1 teaspoon sesame seeds (optional)


Instructions

1. Bring a large pot of salted water to a boil. Cook noodles according to package directions. Drain and set aside, reserving 2 tablespoons of the pasta water.

2. In a medium bowl, whisk together peanut butter, soy sauce, sesame oil, rice vinegar or lime juice, maple syrup or honey, and garlic. Gradually whisk in warm water until sauce reaches a smooth, pourable consistency.

3. Add cooked noodles to the sauce. Use tongs or chopsticks to toss until noodles are evenly coated. If sauce is too thick, add reserved pasta water a little at a time.

4. Garnish with green onions and sesame seeds. Serve warm, at room temperature, or cold.

Notes

Use rice noodles or gluten-free spaghetti and tamari for a gluten-free version.

The sauce thickens in the fridge. Reheat gently with a splash of water or enjoy cold.

Add protein like chicken, tofu, or a soft-boiled egg for a heartier meal.
