Ingredients

2 tablespoons olive oil

1 pound chicken breast, cubed

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 small onion, diced

3 cloves garlic, minced

1 cup long grain rice

2 cups chicken broth

1 can Rotel tomatoes, drained slightly

1 cup corn kernels

1 cup black beans, drained and rinsed

2 cups shredded cheddar cheese

1/2 cup diced tomatoes

1/4 cup chopped fresh cilantro

1/4 cup sour cream or lime crema


Instructions

1. Heat olive oil in a large deep skillet over medium-high heat.

2. Season the cubed chicken with chili powder, cumin, smoked paprika, salt, and black pepper.

3. Add the chicken to the skillet and cook until browned and fully cooked through.

4. Stir in the diced onion and cook until softened.

5. Add the garlic and cook for 1 minute until fragrant.

6. Stir the uncooked rice into the skillet until coated in the seasonings.

7. Pour in the chicken broth and Rotel tomatoes.

8. Add the corn and black beans and stir well.

9. Bring the mixture to a simmer, then reduce the heat to low.

10. Cover the skillet and cook for 18 to 20 minutes until the rice is tender.

11. Sprinkle the shredded cheddar cheese over the top.

12. Cover again for 2 to 3 minutes until the cheese is melted.
