Description

This Classic Beef Stew is the ultimate comfort food dinner packed with tender beef, hearty potatoes, carrots, mushrooms, and a rich savory broth. Perfect for easy dinner ideas, cozy family meals, meal prep, and cold weather comfort food, this easy recipe delivers deep flavor with simple ingredients and slow-cooked goodness.

Ingredients

2 pounds beef chuck roast, cut into cubes

2 tablespoons all-purpose flour

1 teaspoon salt

1 teaspoon black pepper

2 tablespoons olive oil

1 large onion, diced

3 cloves garlic, minced

2 tablespoons tomato paste

1 cup red wine

4 cups beef broth

1 tablespoon Worcestershire sauce

4 carrots, sliced

4 potatoes, cubed

8 ounces mushrooms, sliced

1 teaspoon dried thyme

2 bay leaves

2 tablespoons fresh parsley, chopped

Instructions

1. Pat the beef dry and season with salt and pepper. Coat lightly with flour.

2. Heat olive oil in a Dutch oven over medium-high heat. Brown the beef in batches and set aside.

3. Sauté the onion until softened, then add garlic and cook briefly.

4. Stir in tomato paste and cook for 1 minute.

5. Pour in red wine and scrape the browned bits from the bottom of the pot.

6. Return the beef to the pot and add broth, Worcestershire sauce, carrots, potatoes, mushrooms, thyme, and bay leaves.

7. Bring to a simmer, cover, and cook for about 2 hours until the beef is tender.

8. Remove bay leaves, garnish with parsley, and serve hot.

Notes

Use beef chuck roast for the most tender texture after slow cooking.

Brown the beef in batches to develop deeper flavor in the stew.

Let the stew rest for 10 minutes before serving so the broth thickens slightly.
