Ingredients

2 cups all-purpose flour

3/4 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter softened

1/2 cup granulated sugar

1/2 cup brown sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup brewed coffee cooled

1/2 cup buttermilk

1/2 cup unsalted butter softened

2 1/2 cups powdered sugar

1 tablespoon instant espresso powder

1 teaspoon vanilla extract

2 tablespoons heavy cream


Instructions

1. Preheat the oven to 350°F and line baking sheets with parchment paper.

2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.

3. In another bowl, beat butter, granulated sugar, and brown sugar until fluffy.

4. Add eggs one at a time, then mix in vanilla extract.

5. Alternate adding the dry ingredients with the buttermilk and brewed coffee until combined.

6. Scoop batter onto prepared baking sheets using a cookie scoop.

7. Bake for 10 to 12 minutes until the tops spring back lightly.

8. Cool completely on a wire rack.

9. Beat butter, powdered sugar, espresso powder, vanilla, and heavy cream until fluffy.

10. Pipe frosting onto half the cookies and sandwich with remaining cookies.

Notes

Use cooled brewed coffee so the batter stays smooth and balanced.

Do not overbake the cookies or they may lose their soft texture.

Chill the assembled whoopie pies for 20 minutes before serving for cleaner layers and better flavor.
