Ingredients
2 tablespoons oil
1 pound beef chuck or shredded pork
1 medium onion, diced
3 cloves garlic, minced
1 cup Hatch green chiles, chopped
1 cup green enchilada sauce or salsa verde
1/2 cup chicken broth
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups shredded Monterey Jack cheese
1/4 cup chopped fresh cilantro
4 large flour tortillas
Instructions
1. Heat the oil in a large skillet over medium heat and cook the beef or pork until browned and cooked through.
2. Add the diced onion and cook until softened, then stir in the garlic and cook for 30 seconds.
