Ingredients
8 oz rice noodles
2 cups cooked chicken breast sliced
2 eggs
1 cup bean sprouts
1 cup shredded carrots
3 green onions chopped
3 cloves garlic minced
2 tablespoons fish sauce
2 tablespoons soy sauce
1 tablespoon tamarind paste
2 tablespoons brown sugar
1 lime cut into wedges
1/3 cup crushed peanuts
2 tablespoons vegetable oil
Instructions
1. Soak rice noodles in warm water until soft then drain
2. Heat oil in a wok or skillet over medium high heat
3. Add chicken and cook until heated through and lightly browned
4. Push chicken to the side and scramble eggs in the same pan
5. Add garlic and carrots cooking until fragrant
6. Add noodles and pour in fish sauce soy sauce tamarind paste and brown sugar
