Chicken Mushroom Stroganoff is a creamy, savory classic that brings comfort to the table with every bite. Succulent pieces of chicken and tender mushrooms are enveloped in a luxurious sour cream sauce, flavored with garlic, paprika, and herbs. Perfect for a family dinner or a cozy evening, this dish pairs wonderfully with pasta, rice, or mashed potatoes.


Ingredients

1 lb (450g) boneless, skinless chicken breasts or thighs, cut into chunks

2 tbsp olive oil or butter

8 oz (225g) cremini or white mushrooms, sliced

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp paprika

1 tbsp all-purpose flour

1 cup (240ml) chicken broth

1/2 cup (120ml) sour cream

Salt and freshly ground black pepper, to taste

2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Heat 1 tablespoon of oil or butter in a large skillet over medium-high heat.

  2. Sear the chicken chunks until golden brown on all sides, about 5โ€“7 minutes. Remove and set aside.

  3. In the same skillet, add remaining oil or butter. Sautรฉ mushrooms and onions for 5โ€“6 minutes.

  4. Add garlic and paprika. Cook for 1 minute, then stir in flour to coat the mushrooms.

  5. Pour in chicken broth slowly, stirring constantly. Simmer for 3โ€“4 minutes.

  6. Return chicken to the pan. Stir in sour cream and simmer for another 3โ€“5 minutes until sauce thickens and chicken is cooked through.

  7. Adjust seasoning with salt and pepper. Garnish with fresh parsley.

  8. Serve hot over noodles, rice, or mashed potatoes.
