Ingredients
1 lb (450g) boneless, skinless chicken breasts or thighs, cut into chunks
2 tbsp olive oil or butter
8 oz (225g) cremini or white mushrooms, sliced
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp paprika
1 tbsp all-purpose flour
1 cup (240ml) chicken broth
1/2 cup (120ml) sour cream
Salt and freshly ground black pepper, to taste
2 tbsp fresh parsley, chopped (for garnish)
Instructions

Heat 1 tablespoon of oil or butter in a large skillet over medium-high heat.

Sear the chicken chunks until golden brown on all sides, about 5–7 minutes. Remove and set aside.

In the same skillet, add remaining oil or butter. Sauté mushrooms and onions for 5–6 minutes.

Add garlic and paprika. Cook for 1 minute, then stir in flour to coat the mushrooms.

Pour in chicken broth slowly, stirring constantly. Simmer for 3–4 minutes.

Return chicken to the pan. Stir in sour cream and simmer for another 3–5 minutes until sauce thickens and chicken is cooked through.

Adjust seasoning with salt and pepper. Garnish with fresh parsley.
