Description

Ingredients

2 lbs beef chuck, cut into cubes

2 tbsp olive oil

1 lb pearl onions, peeled

4 garlic cloves, minced

2 tbsp tomato paste

1 can crushed tomatoes

1 cup red wine

2 cups beef broth

1 cinnamon stick

4 whole cloves

2 bay leaves

1 tbsp red wine vinegar

1 tsp salt

1/2 tsp black pepper

1 tbsp fresh thyme


Instructions

1. Heat olive oil in a large Dutch oven over medium-high heat and brown the beef cubes on all sides in batches. Remove and set aside.

2. Add the pearl onions to the pot and cook until lightly golden and softened.

3. Stir in the garlic and tomato paste and cook for 1 minute until fragrant.

4. Pour in the red wine and scrape the bottom of the pot to loosen the browned bits.

5. Return the beef to the pot and add crushed tomatoes, beef broth, cinnamon stick, cloves, bay leaves, salt, pepper, and red wine vinegar.

6. Reduce heat to low, cover, and simmer for about 2 hours until the beef becomes tender and the sauce thickens.

7. Remove the cinnamon stick and bay leaves, sprinkle with fresh thyme, and serve warm.

Notes

Use beef chuck for the most tender and flavorful results after slow cooking.

Simmer the stew uncovered during the final 15 minutes if you want a thicker sauce.

This dish tastes even better the next day after the flavors have had more time to develop.
