Ingredients
2 pounds chicken drumsticks and thighs
2 tablespoons Jamaican curry powder
4 cloves garlic minced
1 large yellow onion chopped
3 green onions sliced
1 tablespoon fresh thyme
1 Scotch bonnet pepper whole
2 medium potatoes peeled and chopped
2 carrots sliced
1 bell pepper chopped
2 cups chicken broth
1 cup coconut milk
2 tablespoons vegetable oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon allspice
2 tablespoons fresh parsley chopped
Instructions
1. Place the chicken into a large bowl and season with salt, black pepper, allspice, garlic, green onion, thyme, and 1 tablespoon of curry powder. Mix well and marinate for 30 minutes.
2. Heat vegetable oil in a large Dutch oven over medium-high heat. Brown the chicken on all sides until golden, then remove temporarily from the pot.
3. Add the remaining curry powder to the pot and stir continuously for 1 minute to toast the spices.
4. Add onions, carrots, bell pepper, and potatoes. Cook for several minutes until slightly softened.
