Ingredients

2 cups fresh spinach

200 grams paneer

1 medium onion

3 cloves garlic

1 inch ginger

2 medium tomatoes

2 green chilies

1 teaspoon garam masala

1 teaspoon cumin seeds

1/2 teaspoon turmeric

2 tablespoons cream

2 tablespoons oil or ghee

1 teaspoon salt


Instructions

1. Bring water to a boil, blanch spinach briefly, then transfer to ice water.

2. Blend the spinach into a smooth puree and set aside.

3. Heat oil or ghee, add cumin seeds, then sauté onions until golden.

4. Add garlic, ginger, and green chilies, cooking until fragrant.

5. Add tomatoes and cook until soft, then stir in turmeric and garam masala.

6. Pour in spinach puree and simmer gently.

7. Pan-fry paneer cubes until golden.

8. Add paneer to the spinach gravy, stir gently, and finish with cream.

Notes

Do not overcook spinach to avoid bitterness.
