Ingredients
1 ripe avocado
½ cup diced tomatoes
2 tablespoons chopped fresh basil
2 slices sourdough bread
1 teaspoon lemon juice
¼ teaspoon salt
¼ teaspoon black pepper
1 teaspoon olive oil (optional)
1 teaspoon balsamic glaze (optional)
Instructions
1. Toast the sourdough bread slices until golden and crisp.
2. In a bowl, mash the avocado and mix with lemon juice, salt, and pepper.
3. Dice the tomatoes and chop the basil.
4. Spread the avocado mixture over the toasted bread.
5. Top with diced tomatoes and basil.
6. Drizzle with olive oil or balsamic glaze if using.
7. Sprinkle extra salt or pepper if desired. Serve immediately.
Notes
For extra creaminess, mix a bit of feta or goat cheese into the avocado.
Toast the bread just before serving to keep it crisp.
