Description

This Ultimate Creamy Cottage Cheese Pasta brings a rich, velvety sauce without the guilt. Packed with protein and bold flavors, it’s a weeknight winner that’s easy to prepare and irresistibly creamy.


Ingredients

12 oz rotini pasta

1 ½ cups cottage cheese

3 garlic cloves, minced

1 tsp lemon zest

½ cup grated parmesan cheese, divided

1 tbsp olive oil

½ tsp salt

½ tsp ground black pepper

2 tbsp chopped fresh parsley (optional)


Instructions

1. Bring a large pot of salted water to a boil. Cook the rotini until al dente according to package directions. Drain and set aside.

2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1–2 minutes until fragrant, but not browned.

3. In a blender, combine cottage cheese, sautéed garlic, lemon zest, salt, pepper, and half of the parmesan. Blend until smooth and creamy.

4. Pour the sauce into a skillet over low heat and stir in the remaining parmesan. Simmer for 2–3 minutes, stirring gently.

5. Add cooked pasta to the skillet and fold gently with a spatula until fully coated.

6. Serve warm, topped with fresh parsley and extra parmesan if desired.

Notes

Use a high-speed blender to achieve the silkiest sauce texture.

Stir the sauce over low heat to prevent curdling or separating.

Add a splash of reserved pasta water if the sauce thickens too much during mixing.
