Ingredients

1 ½ cups mashed sweet potatoes

1 cup dark brown sugar

½ cup melted butter

2 large eggs

½ cup evaporated milk

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon salt

1 unbaked 9-inch pie crust


Instructions

1. Peel and cube sweet potatoes. Boil or roast until tender. Mash until smooth or use a food processor for a velvety texture.

2. In a large bowl, combine mashed sweet potatoes, melted butter, and brown sugar. Mix with an electric mixer until smooth.

3. Beat in the eggs one at a time. Add evaporated milk, vanilla, cinnamon, nutmeg, and salt. Blend until fully incorporated.

4. Fit the unbaked pie crust into a 9-inch pie dish. Crimp edges as desired. Pour the filling in and smooth the top.

5. Preheat oven to 350°F (175°C). Bake for 50–60 minutes until center is set. Shield crust edges with foil if needed.
