Ingredients

1 lb ground beef

2 cans red kidney beans, drained and rinsed

1 can diced tomatoes (14.5 oz), with juice

2 tbsp tomato paste

1 medium onion, chopped

3 cloves garlic, minced

1 green bell pepper, diced

2 tbsp chili powder

1 tsp ground cumin

1 tsp paprika

1 tsp salt

½ tsp black pepper

1 cup beef broth


Instructions

1. Heat a Dutch oven over medium-high heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain any excess fat.

2. Add the chopped onion, garlic, and green bell pepper. Sauté for 5 minutes until softened and fragrant.

3. Stir in chili powder, cumin, paprika, salt, and pepper. Cook for 1-2 minutes to bloom the spices.

4. Add diced tomatoes with juice and tomato paste. Stir to combine and let it simmer for a few minutes.

5. Add kidney beans and beef broth. Stir well to combine.

6. Bring to a boil, then reduce heat to low. Cover and simmer for at least 30 minutes, stirring occasionally.

7. Serve hot with your favorite toppings like shredded cheese, sour cream, and tortilla chips.

Notes

For more heat, add cayenne or diced jalapeños.
