Description

A rich and comforting fusion of Cajun heat and creamy Italian Alfredo, this Tuscan Garlic Chicken Bites & Sun-Dried Tomato Cajun Alfredo Pasta combines tender golden-seared chicken, sun-dried tomatoes, and rotini pasta tossed in a bold, garlicky Parmesan cream sauce. Perfect for an elegant dinner or cozy night in.


Ingredients

1 lb boneless skinless chicken breast

8 oz rotini pasta

1/2 cup sun-dried tomatoes

1 cup heavy cream

3/4 cup Parmesan cheese (shaved or grated)

3 cloves garlic, minced

2 tbsp olive oil

2 tbsp butter

1 tbsp Cajun seasoning

Salt, to taste

Black pepper, to taste

2 tbsp chopped parsley (for garnish)


Instructions

1. Season cubed chicken with Cajun seasoning, salt, and pepper. Sear in hot skillet with olive oil until golden and cooked through. Set aside.

2. Cook rotini in salted boiling water until al dente. Drain, reserving some pasta water.

3. In the same skillet, melt butter and add garlic. Sauté for 30 seconds.

4. Pour in heavy cream and stir in Parmesan. Simmer until thickened.

5. Add sun-dried tomatoes and cooked pasta to the sauce. Toss until coated.

6. Add a splash of reserved pasta water to loosen the sauce, if needed.

7. Return chicken to skillet. Simmer for 2–3 minutes to marry flavors.

8. Garnish with parsley and extra Parmesan. Serve hot.

Notes

For a spicier dish, increase Cajun seasoning or add red pepper flakes.

Don’t overcook the cream sauce—keep the heat low to maintain smoothness.

Use freshly grated Parmesan for the creamiest texture and best flavor.
