Ingredients

  • 1.5 lbs chicken breast or thighs, cut into cubes
  • 1.5 cups fresh or canned pineapple chunks
  • 1 each red, yellow, and green bell pepper, chopped
  • 1 red onion, cut into chunks
  • 3/4 cup teriyaki sauce
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • Salt and pepper to taste
  • Wooden or metal skewers (soaked if wooden)

Instructions

  1. Make the marinade: In a bowl, whisk together teriyaki sauce, olive oil, garlic, ginger, salt, and pepper.
  2. Marinate chicken: Toss chicken pieces in marinade, cover, and refrigerate for 2 to 4 hours.
  3. Prepare kabobs: Thread chicken, pineapple, peppers, and onion onto skewers, alternating ingredients.
  4. Grill: Preheat grill to medium-high. Lightly oil grates. Grill kabobs for 10–12 minutes, turning occasionally and basting with extra marinade.
