Trisha Yearwood’s Spinach Casserole is a warm, cheesy comfort dish that’s simple to make and full of Southern flavor. This creamy casserole brings together spinach, cheddar, and a creamy blend of dairy for a satisfying side perfect for any gathering, holiday, or weeknight meal.
Ingredients
2 (10-ounce) packages frozen chopped spinach, thawed and well-drained
4 large eggs
1 cup sour cream
1 cup cottage cheese
1 1/2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
2 tablespoons butter, cut into small dots
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray.
2. Ensure the spinach is completely thawed and squeeze out all excess moisture using cheesecloth or a towel.
3. In a large mixing bowl, whisk together the eggs, sour cream, and cottage cheese until smooth. Season with salt and pepper.
4. Stir in the shredded cheddar cheese, then gently fold in the drained spinach until well combined.
5. Pour the mixture into the prepared baking dish. Smooth the top and sprinkle with Parmesan cheese and dot with butter.
6. Bake uncovered for 40–45 minutes, or until the top is golden brown and the center is set.
7. Let cool for 5–10 minutes before slicing and serving.
Notes
Be sure to press all moisture from the spinach to avoid a watery casserole.
Ricotta cheese can be used in place of cottage cheese for a smoother texture.
Letting the casserole rest after baking helps it firm up and slice cleanly.
