Ingredients
1 cup chocolate sandwich cookies, crushed
3 tablespoons melted butter
3 ounces dark chocolate, chopped
3 ounces milk chocolate, chopped
3 ounces white chocolate, chopped
1 ½ cups heavy whipping cream (divided into 3 portions of ½ cup each)
2 tablespoons powdered sugar (optional, for added sweetness)
½ teaspoon vanilla extract (optional, for white chocolate layer)
Instructions
1. Crush the chocolate sandwich cookies in a food processor or in a ziplock bag. Mix with melted butter until it resembles wet sand. Press into serving cups and chill.
2. Melt dark chocolate in a heatproof bowl over simmering water. Let cool slightly. Whip ½ cup heavy cream to stiff peaks, then gently fold into the chocolate. Spoon or pipe into cups over cookie base. Chill.
3. Repeat the same method with milk chocolate and another ½ cup of whipped cream. Layer over the dark chocolate mousse and chill again.
4. Repeat with white chocolate, adding vanilla extract if desired. Fold in whipped cream and layer on top. Chill for at least 2 hours until set.
5. Before serving, top with whipped cream and chocolate shavings if desired.
Notes
Use room temperature chocolate when folding in the whipped cream to avoid seizing or deflation.
For best texture, whip the cream just before using — don’t overwhip.
Layer each mousse only once the previous one is set slightly to keep clean layers.
