Description
This Tomato and Chicken Pasta Delight is a creamy, savory one-skillet dinner packed with tender chicken, rich tomato-cream sauce, and perfectly cooked pasta. Easy enough for weeknights, but elegant enough to serve to guests!
Ingredients
2 chicken breasts
12 oz penne pasta
2 tablespoons olive oil
3 garlic cloves, minced
1 can (15 oz) crushed tomatoes
1 cup heavy cream
1/2 cup grated parmesan cheese
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
2 tablespoons fresh chopped parsley
Instructions
1. Slice the chicken breasts into bite-sized strips.
2. Heat olive oil in a large skillet over medium-high heat.
3. Add the chicken to the skillet, seasoning with salt, pepper, and Italian seasoning. Cook until golden brown and fully done. Remove and set aside.
4. In a separate pot, boil salted water. Add penne pasta and cook until al dente. Reserve 1/2 cup pasta water, then drain.
5. In the same skillet, reduce heat and sauté minced garlic for 1 minute.
6. Add crushed tomatoes and simmer for 5 minutes. Stir in heavy cream and simmer an additional 2–3 minutes until slightly thickened.
7. Return the cooked chicken to the sauce. Add drained pasta and a splash of reserved pasta water if needed. Stir well.
8. Mix in grated parmesan until melted and sauce is creamy.
9. Garnish with fresh parsley and serve hot.
Notes
Let the sauce simmer slowly to avoid curdling the cream.
Always reserve pasta water — it helps bind sauce to pasta beautifully.
