Ingredients
All-purpose flour
Granulated sugar
Eggs
Unsalted butter
Whole milk
Vanilla extract
Espresso or strong coffee

Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Make the batter: Cream butter and sugar until fluffy. Beat in eggs one at a time. Stir in vanilla.
- Combine dry ingredients and alternate with milk into the wet mix until smooth.
- Bake for 18–20 minutes. Let cool on wire rack.
- Soak with espresso: Poke holes in cooled cupcakes and spoon espresso or coffee over each one.
- Make frosting: Beat mascarpone and powdered sugar. Fold in whipped cream until fluffy.
