Ingredients
9 oz cheese tortellini
1 lb Italian sausage
1 can (14.5 oz) diced tomatoes
1 medium yellow onion, chopped
3 cloves garlic, minced
3 cups fresh spinach
1 cup heavy cream
4 cups chicken broth
1 tbsp olive oil
1 tsp salt (or to taste)
1/2 tsp black pepper (or to taste)
Instructions
1. Heat olive oil in a Dutch oven over medium heat. Add the sausage and cook until browned, about 6–8 minutes. Remove and set aside.
2. In the same pot, sauté the chopped onion until soft, about 4 minutes. Add garlic and sauté for 1 minute until fragrant.
3. Pour in chicken broth and diced tomatoes with their juices. Stir and bring to a simmer.
4. Add cheese tortellini and simmer for 5–7 minutes until tender and floating.
5. Reduce heat and stir in heavy cream. Return sausage to the pot and add spinach. Stir until wilted.
6. Season with salt and pepper to taste. Serve warm with parmesan or crusty bread.
Notes
Don’t overcook the tortellini or they may fall apart in the broth.
For extra flavor, add a pinch of Italian seasoning or red pepper flakes while simmering.
