A flavor-packed and simple marinade that brings out the best in grilled chicken kabobs. Juicy, zesty, and loaded with Mediterranean flair, this recipe is perfect for summer cookouts or easy weeknight meals.


Ingredients

1.5 lbs boneless, skinless chicken breast or thighs, cubed

1/4 cup olive oil

2 tablespoons fresh lemon juice

1 tablespoon red wine vinegar

3 garlic cloves, minced

1 teaspoon paprika

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 red bell pepper, cut into chunks

1 yellow bell pepper, cut into chunks

1 green bell pepper, cut into chunks

1 red onion, cut into chunks

Chopped parsley for garnish (optional)


Instructions

  1. Prepare the Marinade: In a large bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, paprika, smoked paprika, cumin, oregano, salt, and pepper.
  2. Marinate the Chicken: Add cubed chicken to the bowl and toss to coat. Cover and refrigerate for at least 1 hour or up to 12 hours.
  3. Soak the Skewers: If using wooden skewers, soak them in water for 30 minutes.
  4. Assemble Kabobs: Thread marinated chicken, bell peppers, and onion alternately onto skewers.
  5. Grill: Preheat grill to medium-high heat. Grill kabobs for 12-15 minutes, turning occasionally, until chicken is cooked through and slightly charred.
  6. Serve: Let rest for 5 minutes. Garnish with chopped parsley and serve.
