Taco Ranch Bites are crispy, flavorful, and packed with cheesy, zesty goodness. These bite-sized delights combine seasoned mashed potatoes, cheddar cheese, and fresh veggies, all coated in a crunchy breadcrumb crust. Ingredients

2 cups mashed potatoes (cooled)

1/2 cup shredded cheddar cheese

1/4 cup finely diced red bell pepper

1/4 cup finely diced green onions

1 tablespoon taco seasoning

1 teaspoon ranch seasoning mix

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/2 cup breadcrumbs (for coating)

1 egg, beaten

1/4 cup all-purpose flour

Oil for frying

Fresh cilantro, chopped (for garnish)


Instructions

  1. Prepare the Mixture – In a large bowl, mix mashed potatoes, cheddar cheese, bell pepper, green onions, taco seasoning, ranch seasoning, garlic powder, and smoked paprika until well combined.
  2. Shape and Coat – Form the mixture into small cubes or balls. Coat each piece in flour, dip in beaten egg, then roll in breadcrumbs.
  3. Fry the Bites – Heat oil in a skillet to 350°F (175°C). Fry the bites in batches for 2-3 minutes per side until golden and crispy. Drain on paper towels.
  4. Garnish and Serve – Sprinkle with fresh cilantro and serve hot with ranch dressing, salsa, or guacamole.
