2 tablespoons butter
1 tablespoon cornstarch
1 cup evaporated milk
4 ounces American cheese (Velveeta-style or slices), cubed
1/2 cup shredded cheddar cheese
2 tablespoons pickled jalapeño juice
1 teaspoon taco seasoning
1/4 cup water (as needed for thinning)
Instructions
1. Melt butter in a saucepan over medium heat.
2. Whisk in cornstarch to form a smooth paste (roux).
3. Slowly add evaporated milk while whisking constantly until thickened.
4. Stir in American cheese and cheddar cheese until fully melted and creamy.
5. Mix in taco seasoning and pickled jalapeño juice.
6. Add water gradually to reach your desired consistency.
7. Keep on low heat until ready to serve. Stir occasionally.
Notes
For a spicier version, add 1–2 teaspoons of diced jalapeños or a pinch of cayenne.
Use sharp cheddar for extra flavor punch or mild cheddar for a smoother profile.
Reheat gently with a splash of milk to maintain a silky texture.
