Ingredients

lbs ground beef (85% lean)

¾ cup breadcrumbs

2 eggs

2 tablespoons gochujang (Korean chili paste)

2 tablespoons soy sauce

1 teaspoon sesame oil

2 cloves garlic, minced

1 tablespoon ginger, minced

3 green onions, chopped

1 tablespoon brown sugar

¼ cup ketchup

1 tablespoon rice vinegar

1 teaspoon sesame oil (for glaze)

1 tablespoon brown sugar (for glaze)

1 tablespoon gochujang (for glaze)

1 tablespoon sesame seeds (for garnish)


Instructions

1. Preheat your oven to 375°F. Lightly grease a 9×5 loaf pan or line with parchment.

2. In a large bowl, mix ground beef, breadcrumbs, eggs, garlic, ginger, gochujang, soy sauce, sesame oil, green onions, and brown sugar until just combined.

3. Transfer mixture into the loaf pan, pressing it evenly. Bake uncovered for 35 minutes.

4. While baking, whisk together ketchup, gochujang, rice vinegar, sesame oil, and brown sugar for the glaze.

5. After 35 minutes, spread the glaze over the meatloaf. Bake for another 15–20 minutes until the internal temperature reaches 160°F.

6. Remove from oven, let rest for 10 minutes. Sprinkle with sesame seeds and more green onions before serving.

Notes

Don’t overmix the meat or it may become dense—gently fold until just combined.

Resting the meatloaf helps the juices redistribute for cleaner slices.

Glaze customization: add honey for extra sweetness or more gochujang for heat.
