1 cup all-purpose flour

2 tablespoons unsweetened cocoa powder

1/2 cup granulated sugar

1/4 cup brown sugar

1/2 cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1 tablespoon red gel food coloring

1/2 teaspoon white vinegar

1/4 teaspoon baking soda

4 ounces cream cheese, softened

1/4 cup powdered sugar

1/4 teaspoon vanilla extract (for filling)


Instructions

1. Preheat oven to 350°F (175°C). Lightly grease a mini muffin or regular muffin pan or line with paper liners.

2. In a large bowl, whisk melted butter, granulated sugar, and brown sugar until well combined.

3. Add eggs one at a time, mixing well after each addition.

4. Stir in vanilla extract, red gel food coloring, white vinegar, and cocoa powder.

5. Fold in the flour and baking soda just until combined—do not overmix.

6. In another bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.

7. Add 1 tablespoon of red velvet batter to each muffin cup.

8. Drop 1 teaspoon of cream cheese mixture into the center.

9. Top with a small spoonful of remaining batter. Optionally swirl the top gently using a toothpick.

10. Bake for 13–16 minutes until tops are set and just slightly puffed.

11. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
