Ingredients
3 cups sweet potatoes, peeled and cubed
1 pound ground sausage
1 cup bell peppers, diced
½ cup green onions, chopped
1 ½ cups shredded cheese
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. Preheat oven to 400°F. Toss sweet potato cubes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until tender and caramelized.
2. In a large skillet, cook the ground sausage over medium heat until browned and crumbled. Drain excess grease.
3. In a mixing bowl, combine roasted sweet potatoes, cooked sausage, bell peppers, and half the green onions. Gently toss.
4. Transfer mixture to a greased 9×13″ baking dish. Sprinkle cheese evenly on top.
5. Lower oven temperature to 375°F. Bake uncovered for 20 minutes, or until cheese is melted and bubbly.
6. Garnish with remaining green onions and let rest for 5 minutes before serving.
Notes
For a spicier kick, use hot Italian sausage or add red pepper flakes.
Make it vegetarian by swapping sausage for mushrooms or a meat-free substitute.
