Ingredients
4 boneless, skinless chicken breasts
2 cups stuffing mix (seasoned)
1 cup chicken broth (warm)
4 strips cooked bacon (chopped)
3 tablespoons butter (melted)
2 tablespoons chopped fresh parsley
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 cup gravy (optional, for serving)
Instructions
1. Preheat oven to 375°F.
2. Butterfly each chicken breast by slicing horizontally, but not all the way through. Open flat like a book.
3. Season both sides of each chicken breast with salt, pepper, and garlic powder.
4. In a mixing bowl, combine stuffing mix, warm chicken broth, chopped cooked bacon, melted butter, and parsley. Mix until moistened.
5. Spoon stuffing mixture onto one side of each chicken breast. Fold over and secure with toothpicks.
6. (Optional) Heat olive oil in an oven-safe skillet and sear chicken breasts for 2–3 minutes per side until golden.
7. Transfer skillet or stuffed chicken breasts to a baking dish. Cover loosely with foil.
8. Bake for 25–30 minutes. Remove foil during last 10 minutes to crisp up the stuffing.
9. Let rest for 5 minutes. Remove toothpicks. Serve warm, drizzled with gravy.
Notes
Use thicker chicken breasts for easier stuffing and secure closure.
Searing the chicken adds flavor, but it’s optional if you’re short on time.
If using homemade stuffing, make sure it’s not overly moist to keep the filling from falling out.
